This is hands down one of my favorite meals ever! Let's be honest, pizza never gets old. This recipe is inspired by Mellow Mushroom’s Holy Shiitake Pizza, featuring a simple yet flavorful garlic and olive oil base. Loaded with melty cheese, savory toppings like chicken sausage, caramelized red onion, and mushrooms, it’s finished with truffle-infused olive oil, fresh chives, and parmesan. And don’t forget the garlic aioli dip—it’s the ultimate game-changer!

Can I use regular sausage instead of chicken sausage?

Yes, this pizza goes great with ground italian sausage!

Where do you get your truffle infused olive oil?

I buy this one on Amazon.

Can I use regular mayo for the aioli?

Yes, regular mayo is totally fine. I’m not vegan; I just prefer Veganaise for my personal taste.

Can I use other mushrooms?

Yes, pretty much any mushrooms go good with this pizza but my favorites are shiitake or beech mushrooms. Cremini or portabello mushrooms are my backups if the store doesn’t have shiitake or beech.

Where do you buy your pizza dough?

I use Trader Joe’s pizza dough and love it but any store bought or homemade dough should work. This pizza is also good on Trader Joe’s Gluten Free dough if you are Gluten Free.

Mushroom Truffle Pizza With Garlic Aioli

Ingredients

For the crust
  • 1 lb pizza dough (I use Trader Joe’s but any should work)
  • 2 tbsp olive oil
  • 1 tsp minced garlic
For the toppings
  • 1/2 cup red onion cut into small slices
  • 2 tsp olive oil
  • 2 italian chicken sausage links cut into small pieces
  • 4 oz shiitake mushrooms cut into slices with stems removed (~2 cups once sliced)
  • 4 cups shredded mozzarella cheese (about 3/4ths of a 16 oz bag)
For the garlic aioli
  • 3/4 cup Veganaise or mayonnaise
  • 1/2 tsp lemon juice
  • 1 tsp minced garlic
Final touches
  • Truffle infused olive oil (I use this one)
  • 1.5 tbsp fresh chives finely chopped
  • Grated parmesan cheese

Instructions

  1. Preheat the oven to 415 degrees.
  2. Lightly coat a large sheet pan (I use the Large Caraway Baking Sheet) with olive oil. Spread the pizza dough onto the pan until it takes up most of the pan.
  3. Bake dough for 8-9 minutes until the bottom starts turning golden brown.
  4. Add 2 tsp olive oil to a medium/large pan. Add red onion and cook on low/medium heat for about 15 minutes or until caramelized.Add chicken sausage and mushrooms. Cook for about 4-5 more minutes.
  5. Spread 2 tbsp olive oil and 1 tsp minced garlic on the pizza dough.
  6. Spread cheese evenly over the pizza. Then add the chicken sausage, red onion and mushrooms.
  7. Bake for about 12 minutes or until the cheese is completely melted. Broil for about 1 more minute or until the cheese starts bubbling.
  8. Cut into slices with a pizza cutter.
  9. Drizzle with truffle oil, sprinkle with fresh chives and parmesan. Dip to your taste in garlic aioli.
